Thumbprint Cookies Recipe

Ingredients:

  • 1/2 cup shortening or 1/2 cup butter
  • 1/2 teaspoon vanilla
  • 1 cup sifted flour
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1 egg white
  • 1/2 cup chopped nuts
  • 1/4 cup raspberry preserves

Mix thoroughly shortening, brown sugar, egg yolk and vanilla. Sift together flour and salt, then stir into above ingredients.

Next roll the above mixture into 1 inch balls. Dip the balls in a slightly beaten egg white. Next roll them over finely chopped nuts.

Place them about 1 inch apart on un-greased baking sheet. Press thumb gently into center of each. Fill the holes with raspberry preserves and bake until set.

Bake at 375 degrees for 10 to 12 minutes.
