Ingredients:
- 2 cups un-sifted flour
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 3 tablespoons butter, softened
- 2 teaspoons baking powder
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 tablespoon butter, melted
Preheat oven to 375 degrees. Lightly grease a small cookie sheet.
In a large bowl sift flour, sugar, baking powder, soda and salt. Cut in softened butter with a pastry blender or fork, (until mixture looks like fine crumbs). Add buttermilk. Mix in with fork only until dry ingredients are moistened. Turn out on lightly floured board. Knead gently until smooth. Shape into a ball.
Place on prepared sheet. Flatten into 7 inch circle, (DOUGH WILL BE ABOUT 1/2 INCH THICK). Press a large floured knife into center of loaf, almost through to bottom.
Repeat at right angles, to divide loaf into quarters. Bake 30 to 40 minutes or until top is golden brown and loaf sounds hallow when tapped.
Remove to wire racks and cool. Brush with melted butter. Dust with flour if you wish.
Recipe variation: 1/2 cup seedless raisins and 1 tablespoon caraway seeds
Applesauce Cake Recipe
Ingredients:
Cream shortening and sugar. Add beaten eggs and beat well. Add applesauce, then sifted dry ingredients. Beat smooth and fold in raisins and nuts.
Bake 45 to 60 minutes in greased 8 inch tube pan. Bake in 350 degree oven.
