Applesauce Cake Recipe

Ingredients:

  • 1/2 cup Crisco or butter
  • 1 teaspoon baking powder
  • 1 1/4 cup sugar
  • 1/2 teaspoon baking soda
  • 2 eggs, beaten
  • 1 teaspoon cinnamon
  • 1 cup apple sauce
  • 1/2 teaspoon cloves
  • 2 cups flour
  • 1 cup raisins
  • 1/4 teaspoon salt
  • 1 cup chopped walnuts

Cream shortening and sugar. Add beaten eggs and beat well. Add applesauce, then sifted dry ingredients. Beat smooth and fold in raisins and nuts.

Bake 45 to 60 minutes in greased 8 inch tube pan. Bake in 350 degree oven.

Irish Soda Bread Recipe

Ingredients:

  • 2 cups un-sifted flour
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 3 tablespoons butter, softened
  • 2 teaspoons baking powder
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 tablespoon butter, melted

Preheat oven to 375 degrees. Lightly grease a small cookie sheet.

In a large bowl sift flour, sugar, baking powder, soda and salt. Cut in softened butter with a pastry blender or fork, (until mixture looks like fine crumbs). Add buttermilk. Mix in with fork only until dry ingredients are moistened. Turn out on lightly floured board. Knead gently until smooth. Shape into a ball.

Place on prepared sheet. Flatten into 7 inch circle, (DOUGH WILL BE ABOUT 1/2 INCH THICK). Press a large floured knife into center of loaf, almost through to bottom.

Repeat at right angles, to divide loaf into quarters. Bake 30 to 40 minutes or until top is golden brown and loaf sounds hallow when tapped.

Remove to wire racks and cool. Brush with melted butter. Dust with flour if you wish.

Recipe variation: 1/2 cup seedless raisins and 1 tablespoon caraway seeds

Hungarian Goulash Recipe

Ingredients:

  • 2 lbs. beef chuck, cut in 1 1/2 inch cubes
  • 1 tablespoon paprika
  • 1-8 oz. can tomato sauce
  • 1 cup chopped onion
  • 1- no. 2 can (2 1/2 cups) tomatoes, drained
  • 1/3 cup fat
  • 1 tablespoon enriched flour
  • 1 clove garlic, crushed
  • 1 1/2 teaspoons salt
  • 1 Bouquet Garni

Brown beef in hot fat, add onion and cook till golden, but not brown. Stir in flour, salt and paprika. Add remaining ingredients, simmer gently covered till meat is tender, about 1 1/2 hours to 2 hours. Remove Bouquet Garni. Serve goulash with hot noodles.

Bouquet Garni:

  • 1 bay leaf
  • 2 tablespoons chopped parsley
  • 1 stalk celery & leaves
  • 1 blade thyme

All the above must be tied in a little cheesecloth bag, so they can be easily discarded after cooking.

Best Apple Cake Recipe

Ingredients:

  • 4 cups cooking apples (pared & sliced)
    1 teaspoon salt
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 cup sugar
  • 2 tablespoons butter
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 cup milk
  • 2 cups flour
  • 1 teaspoon vanilla
  • 2 1/2 teaspoons baking powder

Combine apples, 1 cup sugar, butter, and cinnamon in saucepan. Cook over low heat until tender. Pour into well greased and lightly floured 12 by 8 by 2 inch pan.

Sift together 2 cups flour, baking powder and 1 teaspoon salt. Cream 1/2 cup shortening. Add sugar gradually. Blend in 2 eggs. Combine 1 cup milk and 1 teaspoon vanilla. Add alternately with dry ingredients. Pour butter over apples in pan.

Bake at 350 degrees for 35 to 40 minutes. Cool a few minutes, turn out on a large plate. Serve with whipped cream.

Giblet Stew Recipe

Ingredients:

  • 3/4 lb. chicken gizzards
  • 1/2 teaspoon dried basil
  • 1/4 lb. chicken hearts
  • 1/2 teaspoon marjoram
  • 2 1/2 cups chicken broth
  • 1/2 teaspoon pepper
  • 1 small onion, chopped
  • 1/4 cup flour
  • 1 cup sliced celery
  • 1/4 cup cold water
  • 1 cup sliced carrots
  • some hot cooked rice
  • 1/2 teaspoon salt

Place chicken gizzards, heart, chicken broth and chopped onion in a large saucepan.
Bring to boil. Reduce heat and simmer, cover for 1 hour or until gizzards and hearts are tender.

Add celery, carrots, salt, basil, marjoram and pepper. Simmer covered for 20 minutes longer.

Mix flour and water to make a smooth paste. Stir into mixture in saucepan and cook, stirring constantly until mixture thickens and comes to a boil. Then simmer 2 or 3 minutes longer. Serve over cooked rice.

French Onion Soup

Ingredients:

  • 4 large onions
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup butter
  • 1/4 teaspoon cheese for each serving
  • 1 tablespoon flour
  • Melba Toast
  • 6 beef bouillon cubes
  • 4 cups water

Saute onions in 1/4 cup butter. Stir in 1 tablespoon flour, bouillon cubes, water and 1 teaspoon Worcestershire sauce. Simmer for 20 minutes.

Place 1/4 teaspoon cheese on top each serving with Melba Toast.

Dutch Peach Cake Recipe

Ingredients:

  • 4 med. sized peaches
  • 1/2 cup shortening
  • 2 tablespoons lemon juice
  • 1 egg
  • 1 1/2 cup flour
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup melted butter
  • 1/4 cup sugar

Put peaches in bowl. Cover with boiling water. Let stand 1 to 2 minutes. Transfer peaches with slotted spoon to a boil of cold water. Peel and slice peaches thinly.

Sprinkle with lemon juice to keep from darkening. Sift flour, baking powder, salt and 1/4 cup sugar in a bowl. Cut in shortening with a pastry blender until mixture resembles cornmeal. Beat egg and milk together. Add to flour mixture. Stir just until dough is blended.

Spread dough in pan. Press peach slices into dough in rows. Mix 1/4 cup sugar and cinnamon and sprinkle on top. Drizzle top with butter (11 by 7 by 2 inch pan).

Bake 30 to 35 minutes at 400 degrees.

Chocolate Bit Squares Recipe

Ingredients:

  • 1/3 cup butter
  • 1/4 teaspoon baking soda
  • 1 cup brown sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1-6 oz. pkg. chocolate bits
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts
  • 1 cup sifted flour

In a bowl cream butter and sugar until light and fluffy. Beat in egg and vanilla. Mix in the sifted flour and other dry ingredients, chocolate bits and walnuts.

Pour into a greased and floured square pan (8 inches). Bake in a oven at 350 degrees for 30 to 35 minutes, until it shrinks from the side of the pan.

Remove to rack. Cut into squares in pan.

Banana Dessert Cake Recipe

Ingredients:

  • 2 eggs
  • 1 cup sugar
  • 1 cup mashed bananas
  • 1 cup sifted cake flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk, heated
  • 1 teaspoon vanilla

In a bowl beat the eggs until thick. Gradually add sugar, beating until fluffy and light colored. Beat in the mashed bananas. Stir in sifted flour, baking soda and salt alternately with the combined warm buttermilk and vanilla until blended. Pour into a greased and floured square pan (9 inches). Bake in oven at 350 degrees for 30 minutes.

Remove to rack. When cold turn out on baking sheet.

Frosting:

  • 3 tablespoons butterĀ or margarine
  • 2 bananas, sliced
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 1/2 cup flaked coconut

Heat butter, sugar and cream together. Remove from heat and add coconut. Arrange banana slices on cake. Spoon mixture over bananas. Broil slowly until bubbly and golden.

Remove to rack. Serve with whipped cream.

Baked Bows Recipe

Ingredients:

  • 12 oz. egg noodles or bows
  • 3 tablespoons butter or margarine
  • 5 to 6 qts. boiling water
  • 3 tablespoons flour
  • 1 1/2 tablespoons salt
  • 1/2 teaspoon salt
  • 2 tablespoons butter or margarine
  • 1/8 teaspoon mace
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon pepper
  • 1 cup finely diced Swiss cheese
  • 1 cup finely diced cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 qt. milk
  • 2 tablespoons fine dry bread crumbs

Add noodles to boiling water in large kettle with salt. Cook until tender. Drain in colander and return to kettle. Stir in butter until melted. Add grated cheese and mix well. Then add Swiss cheese and cheddar (if desired).

In large saucepan melt butter. Stir in flour, salt, pepper and mace. Gradually blend in milk, stirring until smooth after each addition. Cook, stirring until sauce thickens. Pour into kettle and mix well with noodles. Transfer to large 3 qt. shallow baking dish and sprinkle with bread crumbs, then remaining Parmesan cheese.

Bake in 350 degree oven for 30 minutes or until hot and lightly brown.
