Banana Sour Cream Coffee Cake Recipe

Ingredients:

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed bananas
  • 1/2 teaspoon vanilla
  • 1/2 cup sour cream
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Cream shortening and 1 cup sugar until light and fluffy. Beat in eggs, banana and vanilla. Fold in sour cream. Sift together flour, baking powder, baking soda and salt. Gently fold into creamed mixture, stirring just to blend.

Mix together nuts, 1/4 cup sugar and cinnamon. Sprinkle 1/2 of nut mixture into bottom of well greased 6 1/2 cup ring mold, tube or Bundt pan. Spoon in 1/2 of the batter. Sprinkle with remaining nuts, top with remaining batter.

Bake at 350 degrees for 45 minutes. Let set 5 minutes.
