Apple Walnut Loaf Recipe

Ingredients:

  • 1 1/2 cups sifted enriched flour
  • 1 1/2 cups crushed wheat cereal flakes
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 cup crushed walnuts
  • 1 teaspoon salt
  • 3/4 cup chopped apple
  • 1 teaspoon cinnamon
  • 1 egg slightly beaten
  • 1/4 teaspoon nutmeg
  • 3/4 cup brown sugar, packed firm
  • 1/8 teaspoon allspice
  • 1 1/2 cup buttermilk
  • 2 tablespoons melted shortening or butter

Mix and sift flour, baking powder, baking soda, salt and spices. Add cereal flakes, walnuts and apple. Combine egg, brown sugar, buttermilk and shortening. Mix just enough to moisten dry ingredients. Do not beat.

Turn into a greased loaf pan 8 by 4 by 3 inches.
Bake at 350 degrees for 1 hour. I know, this falls into the category of easy recipes that need long cooking time.
